Processing:
Benedicto and his staff first hand-pick the cherries and then sort them by ripeness. Ideally, the ripe cherries are first soaked in water, then peeled and then fermented in a water bath for 36 hours. Drying takes place on shaded concrete patios.

Barista Recommendation:
Set the pressure of the machine to 6 bar and the temperature to 93°C. Grind 18g of coffee and extract 44g of the resulting espresso in 30 seconds. Adjust the output according to preference. At all times, use filtered or bottled water with an alkalinity range of 60-80 ppm.
Good to know:
Always use beans no earlier than 10 days from the roasting date to make espresso. After the 1st opening, allow the package to air out for at least 24 hours before brewing. This will prevent unwanted bitter notes in the taste.
