To begin with a little about Yemeni coffee:

This is a country where the climatic conditions for growing the bean are fantastic, but due to the high altitude, the infrastructure for processing and distributing the coffee is very complex, expensive and almost non-existent (the problem is the conflicts in Yemen, damaged roads, lack of energy supply...). Farmers have to carry cherries tens of kilometres to processing plants. Independent farms are a great rarity here.

The country also faces a severe shortage of drinking water, so all cherry processing is done in the form of “natural”.

We were very lucky when in 2023 we met the husband and wife team of Yehan and Ala who run the Die Synthese processing project in Yemen. We were absolutely thrilled with their coffee and became friends. Now you can enjoy the result of our friendship too, as they share this coffee gem with us.

How it tastes:

Like plums, citrus, grapes and honey.

Processing:

Deep red and ripe cherries are placed in airtight containers for 142 hours to ferment spontaneously. However, the workers regularly measure the pH and temperature in these containers to prevent any deterioration of the carafes. The cherries are then dried on African beds for 20 days.

What it's good for:

Great choice for Hoop, Pulsar, V60, batch brew, Aeropress or other filtering gadgets.

Good to know:

For filter coffee, always use beans no earlier than 7 days from the roasting date. After the 1st opening, allow the package to air out for at least 4 hours before brewing. This will prevent unwanted bitter notes in the taste.
