This coffee is processed as natural. And how does the process work? Edinson first plucks the ideally ripe coffee cherries from the coffee trees and sorts them. He then sprinkles the whole coffee cherries with enzymes to promote fermentation and leaves the coffee to ferment in containers for 4 days. During the fermentation process, a thermal shock is applied several times - the coffee is transferred to bags and cooled by soaking it in cold water so that the temperature does not rise and the fermentation process is fully controlled. After the thermal shock, the coffee is returned to the fermentation vessel. Once the fermentation is complete, the coffee cherries are dried and then peeled.

Product detailed description

How it tastes:

Like raspberry tart, stone fruit, arabesques.

Processing:

Edinson Argote is a very innovative farmer we know from our 2023 trip to Colombia. Edinson's main focus is on advanced fermentations and fermentations with various additives.

The interesting thing about this coffee is its variety. It is Catturu Chiroso. Caturra Chiroso is a modern coffee variety that has Ethiopian genes in it.

What it's good for:

Great choice for Hoop, Pulsar, V60, batch brew, Aeropress or other filtering gadgets.

Barista Recommendation:

For the best taste, pour water at 100°C over the coffee. Higher temperatures due to possible “burning” of the beans is a myth. We roast it at 600 °C, so you have no way to “burn” it. At all times, use filtered or bottled water with alkalinity in the 60-80 ppm range.

Good to know:

For filter coffee, always use beans no earlier than 7 days from the roasting date. After the 1st opening, allow the package to air out for at least 4 hours before brewing. This will prevent unwanted bitter notes in the taste.

Package contents:

The package contains roasted Arabica coffee beans in the selected quantity.
