This coffee is processed as a washed coffee. And how does the process work? Edinson first soaks the coffee cherries in water. The ones that float out are sorted and collected. Then the cherries are peeled on a peeler and the fermentation bath comes into play - the coffee cherries are placed in a container of water to which enzymes are added to promote fermentation. During the fermentation process, a thermal shock is applied several times - the coffee is transferred into bags and cooled by soaking it in cold water so that the temperature does not rise and the fermentation process is fully controlled. After the thermal shock, the coffee is returned to the fermentation vessel. Once the fermentation is complete, the coffee is dried, then de-parchmented in the dry mill and ready to go to the roasting plant.

Edinson Argote is a very innovative farmer we know from our 2023 trip to Colombia. Edinson's main focus is on advanced fermentations and fermentations with various additives.

The interesting thing about this coffee is its variety. It is Typica Mejorado. Typica Mejorado is a new, modern variety that hasn't been seen much before. The characteristic feature of this variety is its relatively large bean size, which makes it similar to the very well-known Gesha variety.

Good to know:

For filter coffee, always use beans no earlier than 7 days after the roasting date. After the 1st opening, allow the package to air out for at least 4 hours before preparing the coffee. This will prevent unwanted bitter notes in the taste.
